On our website we will be presenting recipes for you to enjoy. Our recipe for late winter is “Cheese Fondue”. What a great way to have a get together with friends and enjoy a heartwarming and fun evening! Low in fat, but rich in flavor, this fondue recipe is easy to prepare and only has 10 grams of fat per serving! Paired with French bread, pretzels or bread sticks, it is a hearty and filling meal.
| Cheese Fondue - Serves 6 |
6 Oz Fat Free Cheddar Cheese, grated
4 Oz Low Fat Hot Pepper Cheddar Cheese, grated
4 Oz Low Fat Velveeta, cubed
2 Oz Low Fat Swiss Cheese, grated
2 T Flour
¾ Loaf French Bread
12 Oz Beer, preferably brown ale
½ Package Dry Onion Soup Mix

Mix the cheeses together and toss with the flour. Cut the French bread into cubes and put in a large bowl. Cover with a towel and set aside. Stir the onion soup mix into the beer in a medium saucepan and heat over medium until it has reached a simmer. Add the cheeses a handful at a time. It is important to stir constantly and go slowly, melting the cheese completely before adding more. The heat should be medium low to low, depending on your stovetop.
Pre-warm a chafing dish or fondue pot. When all of the cheese has been incorporated and the fondue is smooth, pour into the chafing dish and serve with the French bread.
